This oil has an intense green olive fruitiness, medium bitterness and medium high spiciness. The most outstanding sensory notes in this oil are: freshly cut grass and tomato plant, outlined with aromatic plants such as rosemary and thyme.
Velvety in its presence in the mouth, the bitterness is accompanied by a slightly more intense spiciness that imprints a sensation of freshness culminating in a touch of green almond that lasts over time.
Elaboration: Cold extraction at an average temperature of 22º (to preserve the high content of natural antioxidants). Maximum 3 hours from the harvest of the fruit, from 8 to 10kg of olive to obtain 1 litre of oil.
